Easter Baking

Hey Everyone,

I haven’t written a post in quite a while because I have been really bust with school work and revising so please bear with me if there aren’t any new posts over the next few months but I will try to get some posts up in the summer….most likely in August.

Just before the Easter weekend, Zoë Sugg (aka Zoella) uploaded an Easter baking video and blog post and it inspired me to get baking over the Easter weekend. This blog post definitely isn’t going to be as gorgeous as Zoë’s but I thought I would give it a shot.

I used to bake all of the time, most weekends, but since I have been really busy at the moment I just haven’t had the time.

Firstly, I tried to make some pastel meringues but let’s just say they didn’t quite go to plan!

So instead I decided to make some chocolate cupcakes:

These cupcakes were based on this recipe.
The ingredients you will need are:

100g plain flour
20g cocoa powder
140g caster sugar
1 & 1/2 tsp baking powder
a pinch of salt
40g unsalted butter
120ml whole milk
1 egg
1/4 tsp vanilla extract
a 12 hole cupcake tray lined with paper cases

The recipe I used for the chocolate butter icing is here.
The ingredients you will need are:

50g dark chocolate
100g unsalted butter, softened
200g icing sugar
1 tsp vanilla extract
milk (optional) add if the mixture is too dry

To finish them off I added some cut up crème eggs and mini lindt eggs.
